Bleed-Proof Tape Lines

All three are prep coats, but they do different jobs: primer grips bare surfaces, sealer closes off porous ones and separates incompatible paints, and undercoat fills minor flaws and evens out color before the topcoat.

Paint-store shelves offer primers, sealers, undercoats, and combination products, and the labels read interchangeably. They aren't. All three are "prep coats" — coats applied to prepare a surface for the topcoat — but each solves a different problem, and picking the wrong one costs you either adhesion, extra topcoats, or peeling paint down the line.
The first coat on a bare, never-painted surface. Its job is grip: it bonds directly to the raw material and gives every later coat an anchor to hook onto. If the surface has never seen paint, it gets primer.
A close cousin of primer, made specifically to turn porous surfaces non-porous. The classic case is fresh gypsum plaster — a chalky, thirsty surface that would otherwise drink the topcoat unevenly. New drywall is the same story in US practice: the paper face and the joint compound are both porous, which is why "drywall primer" products are sold as primer-sealers (usually PVA). A sealer also works as a barrier coat between incompatible finishes, like putting latex over glossy oil-based paint that would otherwise reject it.
Applied after primer or sealer, before the topcoat. It fills minor surface imperfections and builds a smooth, evenly colored base — which also makes it the tool for drastic color changes, lightening a dark surface (or vice versa) so the topcoat covers in fewer coats.
The rule of thumb: new surface → primer; previously painted surface → undercoat. Combination 3-in-1 prep coats (primer, sealer, and undercoat in one can) exist and are a reasonable simplification for most repaints.
