The number one beginner drywall mistake is using mud straight out of the bucket. Mixed mud with the right amount of water spreads instead of drags — thicker for fills and first coats, wetter for taping and final coats.

Mud straight out of the bucket is thick, stiff, and full of air. Spread it that way and it drags under the knife, dries out before you can wipe it down, and leaves the lumpy, over-worked patches that fill beginner-drywall photo threads. The people who can't get their mud to move the way it does in the videos usually aren't missing technique — they're missing water.
Always mix your mud, and match the consistency to the task. Add water a little at a time — a couple of small scoops, mix, check — because you can't take water back out.
Thinner than that — soupy, big bubbles when mixed — is only for pump-fed taping tools and corner flushers. For hand work it just shrinks heavily and makes a mess.
